Mmmittwochsrezept: Easy Peanut Butter Pretzel Granola Bars

About two weeks ago I tried making muesli bars, pardon me, Granola Bars myself for the first time.

Even though I improvised half of it, we loved the result!

Especially during a short break they just are ideal small munchies. Plus you know exactly what you are getting in these, how much sugar you actually used. Homemade but super easy and quick, promised! Excluding the cooling off time I would estimate the “baking” process at about 15 minutes max!

I wouldn’t just mix up generic muesli though, obviously, hence this special kind of Granola Bar recipe:

No-Bake Peanut Butter Pretzel Chocolate Granola Bars

I found a granola bar recipe on twopeasandtheirpod, but since it was in American cup measurements, I had to adjust it. I changed the relation of ingredients and added chopped nuts, simply because I love the crunch nuts give. So here we have my tested and approved (by picky other half!) mixture as a recipe:

This amount of ingredients get me about 12 rather large bars. (It also depends on the size of your casserole dish)

Ingredients

  • 100g butter
  • 50g sugar(brown sugar works great too!)
  • 150g honey
  • 150g peanut butter (best smooth and sugar-free)
  • 1 tbsp. vanilla extract
  • 250g oats
  • 60g puffed rice (or zB Rice Cereal)
  • 40g chopped nuts (unsalted)
  • 100g chopped salted pretzels
  • 3 rows of chocolate (I prefer dark or white) or chocolate chips.

Prepare a flat, rectangular casserole dish with baking sheet – make sure to get all the edges as well so the mixture doesn’t stick to it.

Melt the butter, sugar, honey and peanut butter in a larger frying pan over low heat and keep stiring occasionally until it bubbles up. Let it cook for about another 2 or 3 minutes while stiring; I always take it off the hob when the sides starts browning ever so slightly while stiring. Pour in the vanilla extract.

Add the dry ingredients in a deep bowl and pour the honey mixture on top. Mix it up well until there are no dry bits left.

Put the mixture in the dish and spread it evenly with a spatula. Let it cool off for a bit and sprinkle the chocolate on top, press on if needed. Cooling off a bit more is recommended before putting it in the fridge for at least 30 minutes, best over night to get a clean cut. I had mine in the fridge for about 1.5 hours.

The bars harden up nicely and let me tell you, you need a sharp, large kitchen knife to cut through properly. Cut evenly in about 12 bars and serve. Or put in a box and store in the fridge for about 1 week, crispy and tasty 🙂

I just love these things, the rice cereal just gives it an extra light crunch! A bar during a short break at work and it stops that collywobbles, the sweetness is a nice pick me up for that dreaded afternoon low. Perfect with a cuppa as well!

Alternatively you can always try different ingredients, add raisins or coconut flakes etc.

Vor ca. zwei Wochen habe ich mich das erste Mal aus gegebenen Anlass an selbstgemachten Müsliriegeln, pardon, Granola Bars versucht.

Obwohl ich leicht improvisiert habe, hat uns das Ergebnis richtig gut geschmeckt!

Für die kleine Pause zwischendurch ideal und man weiß einfach genau, was drin ist und bspw. wie viel Zucker man nun wirklich verwendet hat. Hausgemacht, aber super einfach und schnell – Zubereitungszeit inklusive Vorbereiten ohne Abkühlungszeit würde ich bei ca. 15 Minuten ansetzen! Wenn überhaupt.

Ich habe aber natürlich nicht einfach Müsli vermischt, nicht doch, ich habe mir ganz spezielle Granola Bars gemacht:

Das Rezept habe ich von twopeasandtheirpod abgewandelt, weil es mit den amerikanischen Cup-Maßen einfach nicht so funktioniert bzw. habe ich die Relationen etwas verändert und auch mit Nüssen angereichert, einfach, weil ich Nüsse gerne mag. Daher also meine erprobte Mischung jetzt als Rezept:

Die Zutaten bescheren mir ca. 12 recht große Riegel.

Zutaten

  • 100g Butter
  • 50g Zucker (auch brauner Zucker)
  • 150g Honig
  • 150g Erdnussbutter (am besten glatt und ohne Zucker)
  • 1 TL Vanilleextrakt
  • 250g Haferflocken
  • 60g Puffreis (oder zB Rice Cereal)
  • 40g gehackte Nüsse (ungesalzen)
  • 100g gesalzene Brezeln grob gehackt
  • 3 Rippen Schokolade gehackt oder eine Handvoll Schoko Chips

Eine flache, eckige Auflaufform mit Backpapier auslegen – auch über alle Ränder! So löst setzt sich die Mischung aus Honig-Zucker-Erdnussbutter nicht an der Form fest.

In einer großen, höheren Pfanne Butter, Zucker, Honig und Erdnussbutter über niedriger Hitze schmelzen, dabei immer wieder umrühren bis es Blasen schlägt. Dann ca. 2 weitere Minuten unter Umrühren weiterköcheln lassen und dann vom Herd nehmen. Einen Teelöffel Vanilleextrakt einrühren.

Jetzt flink auf die Haferflocken, den gepufften Reis und die Brezeln geben und gut vermischen, bis alles mit der Honig-Zucker-Mischung bedeckt ist und keine trockenen Zutaten mehr zu sehen sind.

Die Masse in die Auflaufform gießen und mit einem Spatel flach und eben drücken. Etwas abkühlen lassen und dann mit der gehackten Schokolade bestreuen, die darf ruhig etwas anschmelzen. Abkühlen lassen und dann mindestens 30 Minuten in den Kühlschrank geben; am besten jedoch über Nacht, um einen guten, glatten Schnitt zu bekommen. Meine hier waren ca. 1,5 Stunden gekühlt.

Die Bars werden schön hart und man braucht ein scharfes, großes Küchenmesser zum Schneiden. Gleichmäßig in Riegel schneiden und genießen. Oder in eine Box und im Kühlschrank locker eine Woche knusprig lagern 🙂

Ich liebe diese Dinger, der gepuffte Reis gibt dem ganzen einen ganz leichten Crunch. Ein Riegel für die Arbeitspause und man hat kein flaues Hungergefühl mehr und die enthaltene Süße gibt einem im Tief einen Schub. Auch ideal zum Kaffee oder Tee!

Als Alternative kann man natürlich andere Zutaten ausprobieren, Rosinen dazu geben oder Kokosflocken usw.
