Mmmunch: No Bake Peanut Butter Energy Bites

Even though it’s admittedly fairly late already, I finally wanted to post my spin on the very popular No Bake Peanut Butter Energy Bites posten. If there’s anything that I really love but barely buy for myself then it’s muesli bars and all their “energy bar” relatives. Most of the times they are too expensive for what they are, especially regarding their sugar content, and don’t taste as nice as the packaging would suggest…

The internet to the rescue! Even if you only had a few minutes to spare, there are crazy amounts of recipes for experimenting and enjoying. Plus you just know what’s in them! And you can mix just to your taste, with more or less chocolate etc. I have shown these Bites before on Instagram and since I finally made another batch of peanut butter I could make them again with a slight variation of ingredients – I especially love experimenting with No-Bake-Recipes since you can see straight away if it will work or not!


When you know what it contains I enjoy this kind of “snack”, because it isn’t so unhealthy despite being so tasty – you don’t even lust after conventional candy anymore!

I have already posted about my spin on granola bars before, right now I enjoy these Energy Balls a lot since they are even more practical and so easily popped into your mouth…Just a few ingredients and you have a great mixture full of tasty and healthy things.



The only real “work” about this is chopping the chocolate and toasting the coconut flakes – very simple indeed, especially when using shop bought peanut butter. Even though making nut butters yourself is just oh-so-easy. You could prepare these Energy Bites in the morning even, if you fancied.

Incredibly delicious, small energy balls, ideal for breakfast or on the go!

Prep Time 15 minutes Cook Time 30 minutes Total Time 45 minutes

  • 140 g oats
  • 50 g toasted coconut flakes
  • 100 g peanut butter
  • 25 g cashew butter
  • 90 g flax seeds
  • 90 g chocolate bits
  • 120 g honey/agave
  • 1 tb vanilla extract

Preparations

  1. Roast the coconut flakes in a pan for a few seconds, chop the chocolate and make the peanut butter if you use home made.

Directions

  1. Stir all the ingredients together and mix well in a bowl. Chill the mixture in the fridge for about 30 minutes – don’t skip this step!
  2. Then form about 20-25 balls of a convenient bite size and chill again. The energy bites will last you at least a week in the fridge in an airtight container.

Lightly wet your palms to form the bites to avoid stickiness. Moreover, you can always go without sugar and additives if you make your own nut butters (super easy!).If you wanted to, you could also substitute the dark chocolate with raisins or nuts or add some chia seeds etc. – get creative!

The good thing about this mixture is that you can easily press it into bars as well in case the forming takes too long.
